Recipe Nachos Tomatoes. This is truly one appetizer that looks as good as it tastes. In this recipe, nachos take a vegetarian turn, with buttery pinto beans, tender carrots or sweet potatoes (or both), and a tomato-and-tomatillo salsa.
This recipe is an ideal dip for Nachos chips or Doritos chips and can even be had on fajitas. Like your nachos with the works? Garnish nachos with chopped tomatoes, jalapenos, and barbeque sauce.
Remove the nachos from the oven and top with the remaining cherry tomatoes, spring onions, coriander and chilli, if using.
Nachos don't need to be overloaded with heavy ingredients.
Stir together remaining tomatoes and reserved liquid with beans in medium bowl. Take some Velveeta and a can of Ro-Tel tomatoes, heat, mix, and dip! I like to make this using ground turkey or ground chicken and I like to use either tomato juice or tomato sauce instead of water when I combine the taco seasoning with the browned ground meat.
